— Breaded Chicken Ingredients:
2 chicken breasts
1 egg (beaten)
1/4 cup arrowroot flour (or any gf flour)
1 cup ground flaxseed
— Sweet n’ Spicy Glaze Ingredients:
1/3 cup honey
1 tbsp low sodium gluten free soya sauce
1 tbsp siracha hot sauce
1 clove garlic
1 tbsp avocado oil
1 tbsp sesame seeds
1 green onion
Preheat oven to 400F. Line a baking sheet with tinfoil and grease with oil.
Cut up chicken into bite size pieces.
Using 3 bowls- fill the first bowl with flour, second bowl with egg and third bowl with flaxseed. Coat each piece of chicken in flour, then egg, then flaxseed. Once coated set chicken on baking sheet.
Bake chicken in 10 minutes.
While the chicken is baking make the glaze- In a pot on the stovetop add in all glaze ingredients. Cook in medium heat until it begins to boil.
When the chicken is done, remove from oven. Dip chicken pieces in glaze and then set on a plate.
Once all the chicken is coated top with sesame seeds and green onions.
Serve with rice, cauliflower rice or your favourite vegetables.
