Paleo Coconut Chocolate

Oh chocolate, how I love thee!  But unfortunately, all store-bought chocolate in Canada contains sugar or artificial sweeteners. That’s why I’m always trying to come up with an alternative.

This 4-step Paleo coconut chocolate can be made easily in seconds! It’s gluten-free, grain-free, dairy-free, refined sugar-free, nut-free and vegan. With only 1 teaspoon of honey, the sugar content is lower than other chocolate varieties you would buy in the store. Enjoy this chocolate over strawberries, in chia pudding as a bark with mixed nuts or on its own!

Ingredients:

1 1/2 tablespoons organic coconut oil
1 teaspoons raw honey (I prefer solid honey from local farms)
5 drops liquid stevia
1/2 teaspoon pure vanilla extract (optional)

4 tablespoons organic raw cacao powder or cocoa powder
Dash Pink Himalayan rock salt (optional)

Directions:

1. Melt coconut oil and honey it small pot and stir to combine.

2. Add liquid stevia and vanilla extract.

3. Add cacao powder and pinch of salt, and stir to combine until you have chocolate liquid.

4. Pour into mold or small cup and freeze for 15-20 minutes.

Voila!
