Grilled Brie With Grilled Vegetable Relish

1 tbsp. oil
1/2 medium zucchini sliced in half horizontally
1/2 medium yellow squash, sliced in half horizontally
1/2 small sweet onion, sliced in half through the core
1/2 poblano pepper, seeds removed
1/2 cubana pepper, seeds removed
1/2 tsp. kosher salt
1/8 tsp. fresh ground black pepper
1 (8 ounce) wheel of brie
1 box Breton Gluten Free Crackers, Original with Flax or Herb & Garlic

Pre-heat grill to 375˚.
Brush both sides of vegetables with oil and sprinkle with salt and pepper.
Grill on each side for 3-5 minutes.
Cut all vegetables into very thin slices and stir together in a small bowl.
Place cheese directly onto the grill. Grill for about 5-10 minutes minutes per side.
Place cheese onto serving platter and cover with vegetables.
Serve with Breton Gluten Free Crackers or other delicious Dare crackers.
