Grainless Black Bean Burgers with Onion-Garlic Buns

5 burgers

— Black Bean Burger Ingredients:
1 can black beans (rinsed)
1/2 cup ground almonds or cashews
2 tbsp onion (grated)
2 tbsp carrot (grated)
1 clove garlic (crushed)
salt and pepper to taste
1/2 tsp Cajun seasoning
1 egg white (or 1 flax egg)
— Onion-Garlic Bun Ingredients:

1 cup almond flour
1/2 cup tapioca flour
1 tsp baking soda
1 tsp onion powder
1 glove garlic (crushed)
1 tsp apple cider vinegar
2 eggs (or 2 flax eggs)
2 tbsp olive oil
salt to taste
2 tbsp sesame seeds

Preheat oven to 350F and line a baking sheet with parchment paper.
Put black beans in a bowl and mash with a potato masher. Mash until most of the beans are flattened, leaving some black bean pieces.
Add in ground almonds, onion, carrot, garlic, salt, pepper, Cajun seasoning and egg white. Mix well.
Using your hands, form bean mixture into 5 equal sized burger patties. Set aside.
Now you will start making the buns—in a mixing bowl combine flours, baking soda, onion powder.
In another mixing bowl combine crushed garlic, apple cider vinegar, eggs, olive oil, salt and pepper.
Pour liquid mixture into dry mixture. Stir well into completely mixed.
Take the dough and separate it into 5 equal portions. Roll into balls and place on a baking sheet with parchment paper. Brush on olive oil and sprinkle sesame seeds over each ball of dough.
Bake for 15-20 minutes until the buns are golden.
In the meantime, heat a skillet on the stovetop with olive oil. (medium heat)
Place burgers in the skillet. Cook for 3-5 minutes on each side.
When the burgers and buns are done, assemble with your favourite toppings!
