Wild Rice Chicken Salad Sandwich

4 Servings

2 cups (500 ml) Chopped cooked chicken
1 cup (250 ml) Cooked wild rice
¼ cup (60 ml) Dried apricots, chopped
½ cup (125 ml) Gruyere cheese, grated
⅓ cup (80 ml) Mayonnaise
1 tbsp (15 ml) White balsamic vinegar
1 tsp (5 ml) Honey
Salt and pepper
8 slices Dempster’s Bakery Gluten Zero™ 100% Whole Grain Bread
Leaf lettuce or pea sprouts

Mix together chicken, wild rice, apricots, cheese, mayonnaise, balsamic vinegar, honey, salt and pepper.

Spread the mixture over half of the bread slices, top with leaf lettuce or pea sprouts and the remaining bread. Cut in half and serve.
