Chocolate Hazelnut Truffles

These gluten-free, dairy-free, paleo, vegan, refined sugar-free chocolate truffles can be made in a snap. I love chocolate and this is much more nutritious than store-bought varieties. The combination of ground dates and nuts makes a nice “dough” that is fun to work with. This recipe takes no time and is child-friendly.

1¼ cup natural hazelnuts (works with other nuts)
1¼ cup unsweetened dates (pits removed)
1 tsp vanilla extract
3 ½ tbsp cocoa powder (also works with cacao powder)
¼ tsp sea salt
½ cup natural, unsweetened shredded coconut

Grind hazelnuts in a food processor until finely ground.
Add dates to food processor. Grind until you have a smooth consistency.

In a bowl, add vanilla, cocoa powder and sea salt to your mixture. Stir until combined.

Form small 1 inch round balls with your hands and roll in shredded coconut until covered.
